4 Tbsp unsalted butter
Onions (2) (chopped)
Scallions (2) (chopped)
Cloves of garlic (3) (chopped)
Defrosted spinach (2) (chopped)
Beaten Eggs (4)
1 cup grated Gruyere cheese
¾ cup grated Parmesan cheese
2 tsp kosher salt
1 tbsp dry bread crumbs
½ tsp ground nutmeg
¾ tsp ground black pepper
¼ toasted pignolia nuts
Frozen puff pastry sheets (2) (defrosted)

The Recipe To Make Spinach Pastry
Step 1: Preheat the oven to 375°F
Step 2: Take the butter and chopped onions in a pan. Heat it for about six to seven minutes. Add garlic and continue cooking for another minute. At the same time, remove all the water from the spinach. Now, add the onion mixture to the spinach in a bowl. Also add Gruyere, Parmesan cheese, eggs, bread crumbs, scallions, pignolias, salt, pepper, and nutmeg and mix well.
Step 3: Now, take one sheet of puff pastry and place it on a baking sheet. Put the spinach mixture in the middle of the pastry and spread it evenly. Do remember to keep a 1-inch border. Apply egg wash to the edge. Place the second layer over the mixture and close off the ends using both the sheets. Apply egg wash only on top of the pastry. Make three cuts on the top and add salt and pepper over it. Now, bake for thirty to forty minutes.
