No bake cheesecakes are a summer staple in my house. They are easy to make, require no oven, and are always a hit with guests. This No Bake Chocolate Orange Cheesecake Recipe is one of my favorites – it’s the perfect mix of chocolate and orange flavors!

Ingredients:

250g Digestive biscuits

100g unsalted butter, melted

50g light brown sugar

2 tbsp cocoa powder

zest of 1 orange

juice of half an orange

500g cream cheese, at room temperature

200g icing sugar, sifted

1 tsp vanilla extract

Directions:

To make the cheesecake base, blitz the digestive biscuits in a food processor until they’re broken up but still with some larger pieces. Add the melted butter, brown sugar and cocoa powder and pulse until everything is mixed in. Tip into a 22cm springform tin lined with baking paper and press down firmly. Chill in the fridge for 30 minutes.To make the cheesecake filling, mix together the cream cheese, icing sugar, orange zest and juice and vanilla extract until smooth. Pour over the chilled biscuit base and return to the fridge for 3-4 hours, or overnight.Once set, remove from the tin and cut into slices to serve.
