Hummingbird Cake With Cream Cheese Frosting

Preparation Time: 25 min.
Cook Time: 35 min
Makes: 10 slices

Ingredients:

1. Hummingbird Cake:

– All-purpose flour, 2 cup
– Ground cinnamon, 1 teaspoon
– Ground nutmeg, a ½ teaspoon
– Salt, a ½ teaspoon
– Whole egg, 1
– Egg yolk, 1
– Coconut sugar, ¾ cup
– Crushed pineapple ½ cup
– Vanilla extract, 1 teaspoon
– 3 ripe mashed bananas
– Coconut oil, 1/3 cup

2. Cream Cheese Frosting:

– Greek yogurt, plain, ½ cup
– Softened cream cheese, 4 oz.
– Vanilla extract, 2 teaspoons
– Maple syrup, pure, 4 teaspoons
– Chopped pecans, ¼ cup


Directions:


• Hummingbird Cake:
1. Preheat your oven to 180°C.
2. Grease 3 6-inch round cake pans. Apply some flour on the pans.
3. In a bowl, add all-purpose flour, cinnamon, nutmeg, baking soda and salt. Set it aside.
4. In a mixer, add egg yolk, egg, coconut sugar. Beat until it becomes smooth and creamy.
5. Add mashed banana, crushed pineapple, vanilla extract and coconut oil. Mix well.
6. Add the flour mixture into this wet mixture in the batches of two. Combine the whole mixture thoroughly.
7. Separate the batter into 3 previously prepared cake pans.
8. Bake each set for 30-35 minutes until it is done. Use a toothpick at the cake’s center and see if it comes out clean.
9. Place the ready cakes on a cooling rack for 15 minutes minimum.

Cream Cheese Frosting
1. In a medium-sized bowl, add greek yogurt, cream cheese, maple syrup and vanilla extract.
2. Use a hand mixer and mix it until no clumps are present. Frosting must be creamy and smooth.
3. Now take one cake. On top of it spread the cream cheese frosting. Repeat the process three times, on-top-of the-other. Garnish it with chopped pecans. (Keep the sides free from frosting).

Pumpkin Bundt Cake

Preparation Time: 10 min.
Cook Time: 1 hour
Makes: 1 cake

Ingredients:
– Almond flour, 2 ½ cups
– Coconut flour, ½ cup
– Swerve sweetener, 2/3 cup
– Whey protein powder, unflavored, 1/3 cup
– Baking powder, 1 tablespoon
– Cinnamon, 2 teaspoons
– Salt, a ½ teaspoon
– Ginger, 1 teaspoon
– Cloves, a ¼ teaspoon
– Pumpkin puree, 1 ½ cups
– Large eggs, 4
– Melted butter, ¼ cup
– Water, ½ to 2/3 cup
– Vanilla extract, 1 teaspoon


Directions:
1. Preheat the oven at 325°F.
2. Grease a bundt pan properly.
3. Whisk almond flour, protein powder, coconut flour, sweetener, baking powder, ginger, cinnamon, salt and cloves.
4. Stir in the pumpkin puree, butter, eggs, vanilla extract and (optional ½ cup water). Only add water if the puree is thicker.
5. Transfer the whole batter on the greased pan.
6. Bake until the cake is set or 55-60 minutes. Put a small pointy clean object in the center. See if it comes out clean, then your cake is done.
7. Remove the cake from the oven. Let it cool for sometimes. And serve with some syrup.
