Cream Cheese Frosting Carrot Cake
Ingredients:
- Four eggs
- 2 cups all-purpose flour
- 2 tsp baking soda
- 1 tsp cinnamon
- 1 1/2 cups vegetable oil
- 3 cups grated carrots
- 2 cups of sugar
- 1 stick of butter
- 2 tsp pure vanilla extract
- 1 tsp salt
- One packet cream cheese
- One box powdered sugar
- Pecans, chopped
Method:
- Pre-heat the oven to 350-F.
- In the meantime, line two 9″ round cake pans with wax paper.
- Further, in a large mixing bowl add the flour, soda, sugar, cinnamon, and salt. Mix well.
- Then crack the eggs, vegetable oil and grated carrots in that mixture. Whisk until thoroughly combined.
- Divide this batter between the two cake pans evenly.
- Put in the preheated oven and bake for 30 minutes.
- When cakes bake, make sure that you allow the cakes to cool totally to apply the frosting properly.
- To prepare cake icing, put the butter and cream cheese in a medium-sized bowl and mix until both are well combined.
- Further, in the icing slowly start adding the powdered sugar in small portions until all sugar is combined entirely. Then stir in vanilla essence.
- Chill the icing in the refrigerator.
- After sometime apply the frosting evenly all around the cake.
- Add some chopped pecans to the middle layer.
- Also, add remaining pecans on the sides and top of the cake.
- Sprinkle some icing sugar over the cake and be ready to relish it!
3-Tiered Assorted Carrot Cake
Ingredients:
- Three large eggs
- 2 cups all-purpose flour
- 3/4 cup vegetable oil
- 2 tsp baking soda
- 1/2 tsp salt
- 2 cups carrot, grated
- 2 tsp ground cinnamon
- Two cups of sugar
- 3/4 cup buttermilk
- 1 can flaked coconut
- 2 tsp vanilla extract
- 1 cup chopped walnuts
- 1 can crushed pineapple

Method:
- First, line 3 round cake pans with wax paper
- Slightly spray cooking spray and sprinkle flour on wax paper. Set pans aside.
- Mix all-purpose flour, baking soda, salt, and ground cinnamon in a bowl.
- In another bowl whisk eggs, sugar, vegetable oil, buttermilk, and vanilla extract at medium speed with an electric mixer. Blend until it reaches a smooth consistency.
- Then add flour mixture into the egg batter and beat at low speed until combined well.
- Now add in carrot, crushed pineapple, flaked coconut, and chopped walnuts into the cake batter.
- Pour this cake mixture into greased cake pans and place in the oven.
- Bake the mixture at 350° for 25 – 30 minutes. Tip: To test insert a toothpick in the center of the cake and check if it comes out clean.
- Pour Buttermilk Glaze smoothly over all the three layers. Set aside the cake pans to cool on wire racks for about 15 minutes.
- Further, remove cakes from the pans and let them cool thoroughly on wire racks.
- Finally, spread cream cheese frosting between each layer, on top as well as sides of the cake.
Additional tip: You can also deck it up with some flowers or fruits of your choice. - Time to party!
