Boston Cream Pie, One Of The Favorite American Dessert Recipes

The French pastry chef who discovered the Boston cream pie at the Parker House Hotel of the city presumably didn’t expect that after a century later, the two layers of golden sponge cake sandwiching thick custard will become one of the famous dessert recipes.

Boston Cream Pie Recipe


For The Cake

  • 1 1/2 cups flour, plus more for pan
  • 12 tbsp unsalted butter, softened, plus extra for pan
  • 2 tsp baking powder
  • 1/2 tsp kosher salt
  • 1 cup of sugar
  • Three eggs
  • 2 tsp vanilla extract
  • 2/3 cup buttermilk

For The Filling & Glaze

  • 1 cup of sugar
  • Six eggs yolks
  • 1/4 cup cornstarch
  • 1/2 vanilla bean, seeds scraped and kept
  • 1 1/2 cups milk
  • 4 tbsp unsalted butter, cubed and chilled
  • 1 tsp vanilla extract
  • 4 oz. finely chopped bittersweet chocolate
  • 1/2 cup heavy cream
  • 1/2 tsp kosher salt


Step 1

  • Heat the oven to 350° plus grease and flour a 9″ round cake pan.
  • Combine flour, salt, and baking powder in a bowl and whisk.
  • Whisk butter, sugar, and vanilla on medium-high speed of a hand mixer in another bowl about 3 minutes, until pale and fluffy.
  • Crack eggs in the batter one at a time, beating well after every inclusion till smooth.
  • Alternately combine dry ingredients and buttermilk in three batches, starting and finishing with dry ingredients. Beat until just incorporated.
  • Pour batter into prepared pan, level top using a rubber spatula.
  • Bake for about 35 minutes.
  • Then let it cool for 15 minutes.
  • Afterward, invert it onto a wire to cool thoroughly.

Step 2

  • Beat together sugar, salt, cornstarch, and vanilla seeds in a 4-qt saucepan.
  • Further, add yolks, and beat again until it smoothens.
  • Pour in milk.
  • Cook the batter on medium heat, continually stirring, until thickened.
  • Turn off the heat, and add one butter cube at a time. Beat until smooth.
  • Then add vanilla extract.
  • Pour pudding in a bowl and cover with plastic wrap.
  • Refrigerate it until firm, for minimum 2 hrs.

  • Put the chocolate in a bowl.
  • Boil cream in a saucepan over high heat and pour it in the chocolate bowl. Allow it to sit for a minute.
  • Gradually stir cream and chocolate till becomes smooth and shiny. Allow it to cool for 10 min.
  • In a meanwhile, split cake horizontally into two layers with a serrated knife. Note: The top layer will be somewhat smaller than the bottom.
  • Now drizzle chilled pudding on the cut side of the bottom layer and deck up with the top layer.
  • Over the top layer evenly pour the chocolate glaze, let it drip down the edges of the cake.
  • Refrigerate Boston cream pie at least 30 min until glaze is set.
  • Serve chilled or at room temperature according to your taste. Relish!
